Phytochemicals include the following properties:

  • Antioxidant –  ie. allyl sulfides, carotenoids, flavonoids, polyphenols.
  • Hormonal action – ie Isoflavones
  • Stimulation of enzymes – ie Indoles, protease inhibitors, terpenes
  • Interference with DNA replication – ie Saponins, capsaicin
  • Anti-bacterial effect – ie allicin
  • Physical action – ie Proanthocyanidins
